I Hate Working Sundays…

Good morning!! This morning I had to work at 9am (I’m still here) and I really hate having my leisurely sunday mornings interrupted by work. But luckily I only have to be here for a couple hours. I also have to apologize for the pic I took of my breakfast because it is horrible and dark…

I had 2 eggos toasted and topped with Smuckers natural creamy PB and some cherry preserves. PB&J Waffles!  

Big plans for today! When I’m out of work I’m going to head to the gym-cardio and abs- then meet up with my parents to look at some houses (more on that later), and then tonight meeting up with my friend Heather for dinner. Can’t wait to see her, it’s been weeks!!!!!  Oh and I think the Roommate and I need to grocery shop……?

A Happy Saturday Night

Gooooood Evening!! I am currently relaxing in my living room watching Mall Cop with the Roommate and drinking some St. John’s Wort Yogi Tea.

It’s my first cup of this tea-I just bought it last week-and it’s pretty good. It has a licorice-y taste to it. St. John’s wort is supposed to lift your mood so we’ll see if I start feeling “uplifted” by the end of this post!

This evening I went with a friend to this mexican restaurant called Garibaldi for dinner(This is the same place we ate for my sister’s bday last weekend). I was aiming for something a little healthier than the last time I ate there (I had enchiladas then)…

We started with chips and salsa…

For dinner I ordered the soft chicken chimichanga which came with rice, salsa, lettuce, sour cream and guacamole…

I didn’t know it was going to come with cheese on top or I would have ordered it on the side…In all, I only ended up eating about 3/4 of the chimichanga with some of the guac and sourcream. I never even touched the rice or anything, I was full so I stopped.

Then my friend had been talking all night about the dessert she was going to order….

She’s crazy :-) This is called a “so-pa-pee-ya” (I have NO clue how to spell it, sorry!)…it’s toasted tortillas with cinnamon sugar and (i think) caramel. I had two of the 4 pieces. Very good!

Before dinner I went to the gym with the Roommate-we did 30 minutes on the elliptical and then 10 mins on the “ski” machines. According to the machine calorie counters, I burned about 450 calories in 40 minutes. 

Before the gym I had a snack of Triscuits topped with 1 slice of pepperjack cheese to hold me over til dinner…

Aaaaand while I was still at work (late, because of the computers! Arg!) I had my “lunch”….

An english muffin with cinnamon raisin PB, a greek yogurt with 1 chopped up kiwi, and then carrots which I munched on for several hours throughout the afternoon.

Off to relax and catch up on some blog reading! Night!

P.S. Verdict on the tea? Not feeling much uplift yet :-)

Table For One-San Francisco 2008

As promised, this is my original blog post from my trip to San Francisco last year…

I spent the first six days of 2008 in San Francisco, California on vacation by myself.  Originally I was supposed to spend Christmas through New Year’s in Keystone Colorado with my family but, as usual with my family, the plans fell apart less than a month before we were scheduled to go.  I was extremely disappointed by this because the year of 2007 was overall not that great! So, at the last minute I decided to take a (much-needed) vacation all on my own.  Here’s how it went……..!   

TUESDAY: I arrived in the city on New Year’s Day and after traveling for 12 hours, it was still only 3pm Pacific time!  When I got into my hotel room I promptly sat down on the bed and cried.  It suddenly hit me that I was 2,400 miles away from every single person that I know.  I was alone in this huge city and I didn’t know a soul.  It was so overwhelming, especially because I don’t usually get homesick! Now, I did realize at the time that I was exhausted and jet-lagged and I’m sure that was part of my reason for being upset.  So I forced myself to go for a walk along the water…

…and I wandered down to Fisherman’s Wharf (huge tourist trap) but it felt good to be around people.

 It’s kind of cold in the city this time of year-it was, on average, 50 degrees the entire time I was there but I didn’t mind it.  I felt a little better after my walk so I headed back for my room and couldn’t keep my eyes open past 9pm.

WEDNESDAY: Determined to have a better day today! Wandered up into Union Square (shopping district!) and then into Chinatown.

Bought some tea in Chinatown and had a strange but sweet red beans and milk iced drink.  The entire time I was reminded of how much this city reminded me of NYC-but it’s kind of like NYC combined with Orlando.  It has all the different areas-Chinatown, Little Italy, Shopping, a huge park (Golden Gate Park), etc but it doesn’t get as cold as NY does in the winter and it doesn’t get as hot as Orlando does in the summer. It’s bigger than Orlando but smaller than NYC.  Not to mention there are people running and exercising all over the place and there’s an unusual amount of people with dogs.

  And-San Francisco is known as being one of the top “culinary cities” in the U.S. SO-Athletic, Great food, Super pet friendly- It’s like a city made just for me!  Speaking of food, I went on a quest to find this restaurant that was supposed to have the “best dim sum in the city,” and ended up walking 25 blocks before I gave up and hailed a cab. Thank God because I still had about 30 blocks left! It was well worth it though-the dim sum was COMPLETELY AMAZING!! (If you’ve never had dim sum, it’s a type of Chinese food and they walk around with these carts with little bamboo baskets filled with all kinds of little steamed dumplings with everything from shrimp to scallops to snow peas inside them, as well as bbq pork balls and all kinds of delicious things and you choose which ones you want right off the cart. It’s really fresh and you literally get your food within minutes of sitting down!)

 

THURSDAY: Wine Tour!! We headed out of the city and up to Napa where we visited two wineries before lunch (Kirkland Ranch and Madonna), with a wine tasting at each.

 Then we drove into Sonoma for lunch at this tiny Italian restaurant-I ate with two couples both visiting from Australia (they didn’t know one another) and we had a blast!  They’re Australian accents alone were quite entertaining for me! Then we headed out to one more winery (Viansa) before we headed back to the city.  All in all I bought 5 bottles of wine to bring back and had a lot of fun!

FRIDAY: While I was there San Francisco had “the worst storm they’ve had in two years” complete with power outages and flooding-just my luck, right!! Luckily my hotel never lost power and to be honest, it was nothing compared to a hurricane! However-I was supposed to go on a tour to Muir Woods (to see the giant redwoods!) in the morning and a night tour to Alcatraz that night. Both of these got cancelled because of the rain so I decided to go to the mall instead. Except the public transportation system got totally messed up due to the flooding so instead of taking the bus to the mall I walked and by the time I got there I was so soaked I had to wring out my jacket in the bathroom. So-it rained the entire day and I pretty much did a lot of wandering in the mall all day. At night I finally got tired of doing nothing so I looked up a comedy club and went out! Had a drink, listened to a comedian (Tom Rhodes) who, ironically, was from Orlando and had a few good laughs after a yucky day. 

SATURDAY: Every Saturday they have an open market at the Ferry Building Center so, even though it was still raining, I was excited to check it out.  Now, if you love to cook then this place is like Mecca!! I would love to live there just so I could go on Saturdays to buy all this fresh produce, cheeses, meats, wines, etc and cook with them!!  After that, since it was still gloomy I headed back over to the mall (this time on a bus) to check out the spa they have on the top floor. OK, LADIES-If you ever go to California try to go to a Burke William Day Spa!! This place was AMAZING!! Its family owned and operated and they have 9 locations all over California.  All you have to spend is $55 or more and you get access to all of their amenities which include: a cool steam room (yes, cool), a hot steam room, a dry sauna, a huge jacuzzi tub, amazing showers filled with all kinds of shampoos, conditioners, razors, soaps, and little stations to do your hair and get ready filled with every kind of lotion, hair product and hair styling tool you can think of!! They also have a “quiet room” with these INCREDIBLE reclining chairs that recline completely back so you’re almost laying totally flat and you can relax there as long as you’d like! All I got was a manicure and pedicure and I was so relaxed I almost fell asleep.  The woman at the front desk told me she came to San Francisco from Connecticut with a round trip ticket, one suitcase and two garment bags and she never went home.  Don’t tempt me! After my spa excursion I was browsing through a brochure and came across an ad for a “culinary walking tour” through Chinatown and North Beach (sometimes they call it Little Italy) and I figured why not?  So an hour later I met the guide at the entrance to Chinatown and it was me, 3 young Asian kids from Texas, and a couple around my age who were from the city. It was a small group so we all got to know each other and we had a lot of fun. We sampled a huge amount of dim sum at the oldest restaurant in Chinatown; we went to the Golden Gate Fortune Cookie Company and watched as these 2 super old women showed us how to make the cookies, and we had a tea tasting of about ten different kinds of tea (after which I bought more tea)…

Among other things, I learned that the higher up the mountain the tea plants grow, the more expensive they are. I also learned that the normal way to steep tea (loose leaf tea) is only for about 10-20 seconds, then take out the teaball, and you can reuse the same tea several times! Neat huh?

  Then we continued walking up into North Beach which is filled with lots of Italian restaurants, bars and strip clubs.  This is the area that, during the war, the ships would come into port here, hence all of the bars and strip clubs.  We went into this teeny tiny Italian restaurant and the guide led us behind the kitchen and down these stairs into a small comedy club that looked like something straight out of the 1950′s-60′s.  This was where famous comedians such as Steve Allen, Bill Cosby, Maya Angelou etc got their start all those years ago.  And it is kept to look exactly the same as it did when they performed there. They still use it several nights a week to showcase young up and coming talents. Lastly we headed next door to another restaurant where we had some real Italian pizza and (of course!) red wine. 

SUNDAY: My last day! I had managed to reschedule the Alcatraz tour for this morning and when you’re on the boat heading over to the island the view of the city behind you is spectacular!

They tell you all about the history behind the prison and discuss the “infamous escape” of the three prisoners-which, in a nutshell, there were 3 prisoners that managed to escape by stuffing their beds and climbing out into the ventilation ducts (after digging through the concrete wall with a spoon for probably years) and they made it into the water where they were never heard from again. Some people think they died (the water is COLD!) but a lot of people think they escaped and fled to another country.  Apparently they were learning Spanish before their escape.  They are still listed as fugitives to this day.

  So-All in all, I am in love with the city of San Francisco and I would currently move there in a heartbeat.  It is quite possibly the best city I’ve ever been to. Yes, it is even better than NYC (and you know how much I love NYC!) but it doesn’t give me that cold, dark feeling that NYC does.  As for traveling alone, I would say it was a success!!  There were some down points, especially when it would not stop raining, but I got through it all by myself and was determined to experience as much as I could! Isn’t that the way life goes?!

Chick-Fil-A Brekkie

Morning! Despite my super tiredness, I still managed a semi-decent breakfast. I was tired of oatmeal and sweet things and I wanted something more savory sooooo I stopped at Chick-Fil-A on my way to work. For breakfast I always order the Chicken Egg and Cheese Bagel…

This sandwich has 500 calories (not TOO bad for a meal) and 30 grams of protein!!! Plus it’s on a sunflower grain bagel. Yum. I added some ketchup before I ate it and on the side, instead of hash browns, I got a fruit cup…

I love their fruit cups because they actually contain good fruit and not just “grapes, honeydew, cantaloupe” which is sooooo boring! This one had mandarin oranges, strawberries, grapes and apples. Delishioso.

Right now I’m at work but unable to work because of computer problems. It’s good because I have  time to write these posts, but bad because I can’t leave work until the work is done. So boo :-(

I have to get in a workout this afternoon because yesterday I did not. Let’s just hope I can leave work at a reasonable hour…

On another note, this is what happens sometimes when you practice martial arts with an overzealous student…

It actually looks even darker in person but this is the best I could do with my phone cammie. I am a person who, for the most part, is proud of my bruises. I kind of feel like they are “battle scars” (haha, corny, I know). Does anyone else feel that way?

Fridays Are Fun Days!

Hello! I’m actually writing this post on saturday since I was barely home at all yesterday. Yesterday was a normal day, work, etc…

Breakfast was delicious oatmeal (of course)

I topped it with 1/2 banana, a few dried apricots, unsweetened coconut and brown sugar. I think I need to start measuring my toppings :-)

I didn’t have a mid morning snack because I ate breakfast pretty late so I just went straight to lunch…

There is a Nature’s Table  right up the street so I ran up there and grabbed some tomato basil soup…

This is OFFICIALLY the best soup I have EVER EVER EVER eaten in my entire life. First of all, I am not a big soup fan period. But I could eat this everyday it is soooooooooooooooooooooooooooo yummy. Unfortunately, It’s very creamy and therefore I know it must be big on calories. So I save it for a treat every now and then.

And along with my cup of heaven, I had an avocado-cucumber sammie…

on 15-grain bread. The sandwich contained a schmear of avocado, lettuce, tomato, cucumbers and sprouts. I dipped it in  the soup :-)

In the afternoon, I giggled as I grossed out my co-workers with my BROWN MONSTER SMOOTHIE!! Hehehe…I wanted to get in a big dose of fruits and veg somehow so I toted my Magic Bullet blender to work with me along with a frozen banana (one co-worker saw it in the freezer and thought it was a bratwurst, hahaha), a bag of frozen mixed berries I’ve had in the freezer, 4 handfuls of spinach, and the last of my almond milk.  Because of the addition of A LOT of mixed berries, the smoothie definitely turned out brown. I’ll be honest, it looked like baby poop. But it was yummy!! A few brave co-workers even tried it! The verdict? Tastes just like a regular smoothie, maybe with a slight aftertaste. I’m thinking maybe that was from the almond milk, but I guess I’m so used to it I don’t notice it anymore.

I wish I had taken the picture when it was full of brown goodness, but I forgot! I was too busy laughing at everyone’s faces when they saw me drinking brown poo. :-D

When I got home from work, I made a snack of an english muffin and cinnamon raisin PB because I knew dinner was gonna be a long way off. (I was meeting a friend for dinner at about 10-ish).  After my snack I promptly took a nap (I knew I would be out late), then woke up and headed out around 8:30 to meet up with my friend. Things took longer than usual so we didn’t end up eating until almost 11, and I was HUNGRAY!!! We went to Perkin’s and I got a cheeseburger with lettuce, tomato, and some mayo on the side. I also got fries but barely touched them. And I only ate about 3/4 of the burger before I was stuffed. (No picture because again, I forgot-Gotta get better about that!) Had a fun night though!!

There’s Nothing Like A Hard Workout…

To kick your butt and relieve your stress!!! Martial Arts tonight was CARDIO to the max! 80 bajillion kicks, jump kicks, and then a few falls and rolls to top it off. I literally almost passed out-I was getting that hazy feeling around my eyes.  I know to some people that sounds crazy, but every once in a while, I believe it’s good.  It means I’m pushing myself. And I wouldn’t want to continue to do something if it doesn’t make me better in some way.

Martial arts is not only physical, but mental also. So once we are dead tired, our Instructor speaks to us. Today’s lesson was about “keeping your guard up.”  No matter how tired we were between drills, we had to keep our arms up in fighting position, also known as fighting stance (pictured here).  In life, we always have to “keep our hands up” or “keep our guard up” in all kinds of situations. Right now, I’m having some issues at work, as well as some personal issues going on so this definitely spoke to me. Every day I feel like it’s a fight, and there are days (today is one of them) where I can cry about the tiniest thing. But basically, the lesson is we can’t give up. And even when we’re tired and feeling “beat down,” we have to keep our guard up and keep pushing forward.

We also had to think about the next time we’re in a situation where people or things are just wearing us down, over and over. And we had to think of a word to describe ourselves-just one word. And then the next time we’re feeling tired or we feel like giving up, we need to think of that word and remind ourselves that we can pull ourselves through. My word was “Independence.”  I am and always have been a very independent person. Did you know that in the beginning of 2008, I went to San Francisco on a spur of the moment trip, allllll by myself for 5 days?  Completely alone. I wrote a blog about it back then, I’ll try to dig it up and post it along with some pics. San Francisco is such a cool city! But anyways, at least I know that no matter what happens, I know I can always rely on myself. That’s pretty cool :-)

In other news, lunch today was leftovers from last night-spicy shrimp, coconut rice, and 1/2 avocado. The only other things I’ve eaten today is a few handfuls of cheezits and the other half of my 3 musketeers bar as my afternoon snack(not pictured)-I was having a GIANT chocolate craving. I might make a smoothie tonight for dinner but right now all I want is more and more icewater!!  See ya tomorrow!

Apricot-Banana-Coconut-Pecan-Honey Oatmeal

Hello!! I had the MOST delicious bowl of oatmeal this morning. Basically I took my oatmeal recipe from yesterday and added pecans. It was sooo good, and filling! I couldn’t even eat the last few bites!

My oatmeal contained:

1/2 cup skim milk

1/2 cup water

1/2 cup dry oats

1/2 banana, sliced

toppings: dried apricots, unsweetened coconut, chopped pecans, and a generous drizzle of honey

Mid morning I was starved so I had an english muffin topped with cinnamon raisin PB and some hot Tazo peppermint tea because I was freezing!!!

Spicy Tomato Avocado Shrimp with Coconut Rice

My dinner tonight was, for sure, the star meal of the day. I threw together some spicy tomato shrimp with avocado on the side, plus coconut rice (made with brown rice!) and sauteed zucchini.

This is the only pic I have because the camera I’m now using does not take good close up pics at all. They all come out blurry :-(   (Roommate’s cat spilled rootbeer on my old but loved camera and now it won’t even turn on *tear*…so for now, my sister has let me use her hot pink polaroid digital camera. It’s super cute and even has a setting for “food” but I can’t figure out how to make it focus properly on close ups!!!)

Anyways, here’s the spicy shrimp recipe…

Spicy Tomato Shrimp

1 bag of frozen shrimp (prob about 40-50 small/medium sized shrimp)

1 small can tomato paste plus 2 “cans” of water

1/2 onion, chopped

drizzle of olive oil

2 TBSP ground coriander

1/4 tsp cumin

1/4 tsp cinnamon

1/8 tsp cayenne

1/8 tsp turmeric

dash of red pepper (to taste)

dash of hot sauce (to taste)

Thaw shrimp in sink. Heat oil over med heat and add chopped onion. Cook for several minutes, then add tomato paste plus 2 cans of water. Cook several more minutes, then add all spices and hot sauce. Add thawed shrimp and cook just until heated through. Serve on top of coconut rice.

Coconut rice

1 cup brown rice

2 1/2 cups water

salt

unsweetened coconut flakes

Boil water. Add in rice and salt. Cook, covered, 30-45 minutes or until rice is tender. Add in coconut flakes and stir. Serve topped with spicy tomato shrimp :-)

When all the flavors merried together (including the avocado) it was YUMMY!!!!

Backing up, for breakfast this morning I had apricot coconut oatmeal as promised…

It was VERY chocolatey!!!! This was my second Odwalla bar and I loved both of them!! Can’t wait to try more :-)

Lunch was a turkey wrap I made at home with a spinach flat out, turkey, goat cheese, spinach and some halved grape tomatoes.

I was also craving a greek salad so I ran up the street to this little cafe and picked up a small one drizzled with some greek dressing. Their dressing is super thick so I thinned it out slightly with red vinegar.

And after work, I came home and had an english muffin with cinnamon raisin PB and some White Cheddar Cheez-its (AKA White Crack).

LOVE that english muffin. Just looking at it right now is making me want another one. Oh, and for accountability’s sake, I also had a spoonful of brownie (yes, just one regular sized spoonful).

I had planned to take Bella on a 3 mile walk (The same route I would normally run but my shins are hurting right now) but I was reading for a little and I fell asleep. Then I woke up about 7 to a MONSOON outside. It was raining sooo hard! So, the walk got scratched and instead I just set about to make dinner.

Almost everyday when I get home from work, I am so tired that I fall asleep. Maybe this means I’m not getting enough sleep at night? But of course, after my nap, I am not tired again until about 11-12 at night. I think it would help if my work schedule was set, but it’s not. For example, the last 2 days I’ve had to be at work at 7am (out at 3:30) but then some days I don’t have to be there until 9am (out at 5:30). I prefer the early days only because I get out early. Otherwise, I am much more of a night owl so I love to stay up late and sleep late. 

Anyways, even though I’m not tired, I’m off to make some bedtime tea! Nighty night!!

Legs Legs Legs

Hola! Tonight at Martial Arts we did what I like to call “wall work.” Wall work is a great way to practice your kicking technique. Basically, everyone stands against the wall (either back to the wall or side to the wall depending on the kick) and performs kicks. Now, normally all kicks/punches/etc are done from what’s called “fighting stance” which is where you stand with one leg (normally your right leg) slightly back and arms up in “guard position” like this:

But wall work is harder because you don’t have the extra leverage from your leg being back. So you really need to focus on your technique-making sure your standing foot is in the right position, making sure your kicking leg is in the proper load position, etc.

We ran through a bunch of kicks-front kick, roundhouse kick, side kick, hook kick, outside swing kick.

To give you a few examples, I found these 2 cute diagrams on how to perform a few of the kicks.

Needless to say, tomorrow my legs are going to HURT!!

Before heading out to the dojang (dojang is a term used in Korean referring to the “training hall”) I ate a delicious dinner!!

I had baked tofu (I *may* have slightly overcooked it, but it was still good!), Whole wheat couscous with lemon, basil and grape tomatoes and the pile that looks like mashed potatoes is actually…..LIMA BEANS!!!

I bought dried lima beans the other day and soaked them overnight…they started to split open and get all weird and “mushroomy” so I looked online and turns out when you soak them, the beans themselves expand quicker than the skin, so the skin gets all wrinkly and comes loose. To be honest, it looked gross. I wish I’d taken a picture. But I went ahead and slid all the skins off (it was time consuming!) and then soaked them some more. Then today I boiled them for about 30 minutes and they got very starchy and creamy. They looked and tasted A LOT like mashed potatoes!! I was pleasantly surprised!!

After workout I came home and had a dessert…

A brownie (I made them the other day) plus a tsp or two of white chocolate PB and a few spoonfuls of coconut milk cookie dough icecream. It was delish but very rich!!

I’m about to have some chamomile tea before bed. I LOOOOVE bedtime tea :-)

Hooray For Air-Conditioning!

The AC has been out in our apt since friday and today it’s finally all fixed!! It’s not the first time it’s broken (probably the 5th time in the last 2 months, haha) but hopefully now they finally fixed the problem *Fingers Crossed*

This morning for breakfast I had leftover banana waffles from yesterday, topped with greek yogurt + lemon curd, raspberries, blackberries and a drizzle of maple syrup.

It was good but only kept me full til about 10am! Then I snacked on this Kashi bar, it was REALLY GOOD!! Tasted like a candy bar!

Lunch was leftovers from Garibaldi last night…

1 and 1/2 enchiladas plus some of the chips…(this meal was lacking in veg!!)

So to make up for it, when I got home I made myself a Green Monsta (although, today it looks kind of like a Brown Monsta…)

My smoothie was filled with:

-handful of raspberries

-1 banana

-2 strawberries

-3 handfuls of spinach

-almond milk (enough to make the desired consistency, I don’t measure it. I just stuff all the ingred. into the container (I have a Magic Bullet Blender) and then add the almond milk until it comes up to the top)

-3 ice cubes
