Sloppy Joes ‘N Rutabaga Fries

Friday’s dinner was comfort food at it’s best! As I said earlier, I got the idea from Meghann, except I used my own sloppy-joe recipe. Actually, this recipe is based off of the BodyForLife recipe-found in the book Eating For Life by Bill Phillips except I’ve made a few changes. Here’s the recipe:
Sloppy Joes (makes 2 large servings or 3 regular ones)
drizzle of olive oil
1/2 lb ground beef (or turkey, or chicken)
1/2 onion, chopped
1/2-3/4 cup tomato sauce (depending on consistency you like)
1/3 cup BBQ sauce
1/3 cup ketchup
1 tsp chili powder (I am out so I omitted this)
1 tsp paprika
1 tsp cumin
salt and pepper to taste
First, drizzle the olive oil in the pan and add the chopped onion. Cook several minutes until translucent, then add the ground beef. Cook until no longer pink, then add in tomato sauce, BBQ sauce, ketchup and spices. Cook 8-10 minutes until sauce thickens.
Serve on a whole wheat bun or over Rutabaga fries.
Rutabaga Fries
1 Rutabaga, sliced into “fries”
drizzle olive oil
salt n pepper
paprika (optional)
coriander (optional)
Layer the “fries” on a cookie sheet (I line mine with tinfoil for easy clean up!) and drizzle with oil. Sprinkle spices over (except salt) and make sure each fry is coated. Bake at 425 degrees for 30-45 minutes (depending on the thickness of the slices), turning halfway. When done, sprinkle with salt and serve!

I topped mine with some cheddar cheese and a dollop of plain fage yogurt. Plus the remainder of the avocado on the side. Delicious!!
